Are we going to be able to watch "Sunday" games on Sunday ticket that have been delayed until Tuesday or are we getting ripped off?

Those games are most likely going to be aired on the networks and you won't need sunday ticket. I think that's what happened last year.

I want to watch my Seahawks and I live in NYC. I'm afraid they won't play it here.

Both games are airing on FOX tuesday but it depends on where u live. I would guess also they will have it on Sunday ticket as long as you are out of market.
