I believe the website at www.uverse.com is what you want, however it may be shut down later this month.
Many channels have their own sites such as fox.com or abc.com that have shows listed generally a day after they air.
You can also get a Slingbox available via retail for no monthly fees which will give her access. It basically takes the U-Verse TV signal onto her computer instead onto the TV...but I'd recommend a separate U-Verse receiver from your primary one.

Also, she should be able to access any On Demand programming available online using your Uverse ID.
