I just noticed that recordings expire after 90 days! Can AT&T get rid of that option so you can keep them forever or no?

You are looking for the DirecTV Stream forum which is at the below link. One of the downsides of "unlimited DVR" is that programs do delete on a schedule. This is part of the reason why I have U-Verse, which is where you posted.
