I am watching a show through a downloaded app using my DIRECTV stream device. So if I’m watching a discovery plus episode , I’m not seeing how to start over from the beginning without manually holding down the back arrow.

Every app's functionality is different. I can't speak for how it works with Discovery+.

Select the desired recording from the list and select "restart".

I’m not talking about recordings. I’m talking about watching things in an app. There’s no option to restart. I’m using the DIRECTV streaming device.

Live tv? No, you can't tune to a live channel and rewind. If you miss a program ---most of them are available in the on-demand section.
