Intermittent signal strength?

I have recently upgraded to HD. It took two visits from the technician to get my dish aligned, but all has been good for the last couple of weeks. Last night, I was unable to get CNN and ESPN2 HD (searching for signal....), don't know if there were any others. This afternoon they're back and all is fine. I've checked the signal strength and it seems that I have several sats that I consistently receive real strong and two or three are not as good. My question is do I use all seven of the satellites that I see when I go thru the signal strength check? I am consistently very strong on sats 101, 110, 103(c), and 99(c). On 119, I get 3 zeros but the remaining nos. are 95-97. On 99(s) and 103(s) I get some numbers but a lot of zeros. Do I use these two since I get 99(c) and 103(c)? I'm in Northern Virginia if that's relevant.

Is there anything else besides obstructions to the dish and weather that would cause intermittent reception?
