What streaming device are you using?
Typically, if you go to the ALL RECORDINGS list, you'll see a garbage can icon on the right side of each recording to delete that recording.

On my DirectTV Streaming I do not have METV or Charge and I want to know why not! I have it on my regular TV but not on myDirectTV Stream. Also, we can not get channel 8, why not?

METV and Charge are not available with the streaming service. Just because it is offered elsewhere does not mean it is offered here. As for Channel 8, do idea what channel 8 is. If you don't have the channel, it is probably due to the fact they do not have a contract with the broadcaster to broadcast the content in the streaming service.

Deleted means what it says. They are gone. Unlike your home/work computer, your TV service doesn't have a recycle bin.
