Most of Recordings have Disappeared!
I just just went to watch one of my recordings and all but 15 are gone!!! All of those only have one recording when most have several. I had some recordings dating back to last year. Most shows had more than one recording for each show. There were probably about 80 different shows. The last time I checked there was about 20% storage left.
Can these be recovered? If not, I will have no confidence in the Dish equipment going and I will have to change providers.

Wow, that is terrible! Events like this should not happen and yet, somehow they do. Something very similar happened to me once but I was using an external HDD and it wasn't Uverse/Dish but another provider.
My best guess here is if a bit of time and a reboot doesn't cause your missing recordings to reappear, they are likely gone for good. ATT isn't going to do a forensic dive into your DVR to recover the lost file references, nor are they going to reveal exactly the data you would need in order to hire your own third party forensic data team to do the dirty work which could enable you to restore things to where you would like them. Even if they did, the task would be near impossible without access to a host of tools your team would need to gain the low level access required.
