Uverse Android App
When trying to change date and time on the Guide, the option buttons show but the captions (date and time) are blank. If I select any of the option buttons and click Done, it changes the guide, but I can't select a desired date or time. I've reinstalled with no change.

Have you attempted to clear the cache of the U-Verse app? Doing so can clear any settings that may be causing the date and time to appear blank.
We also have steps on clearing the apps data and force closing the app that may possibly help.

Clearing cache won't help. There was an update to the app which made things as described, plus made things really slow. It's like you have to tap the screen to get it to go to the next thing. It says "loading" with the circle for far too long.
The old version updated screens rather instantly.

I've uninstalled, redownloaded and reinstalled, cleared the cache and did a forced stop. No change. I would agree that the problem likely arose with the last update. What next?
